This is special dessert. It is light refreshing. It is quite calorie laden though.
Pineapple Mallow Cream
1 can (8 3/4 ounces) crushed pineapple in heavy syrup
1 Tablespoon lemon juice
2 cups miniature marshmallows
1 cup whipped cream
Combine crushed pineapple, lemon juice, and marshmallows in a large sauce pan. Place over low heat and cook until the marshmallows are melted. Remove from heat and cool. When partially set, fold in whipped cream. Spoon into sherbet or parfait dishes and chill at least 2 hours.
Note: Do not make this recipe without pineapple in heavy syrup. It is not very sweet in the first place and natural juice pineapple make this dessert taste almost bitter.
