Miniature Cheese Cakes

Gr'Anne Bailey gave me this recipe when the girls were little.  I use it when I need a nice dessert that is impressive.

Miniature Cheese Cakes
1 pound cream cheese
2 eggs beaten
3/4 cup sugar
1 teaspoon vanilla
1-1 pound box of vanilla wafers
Cupcake papers
Combine cream cheese, sugar, eggs and vanilla.  Beat until smoooth.  Place a vanilla wafer in the bottom of each cupcake cup in a muffin tin.  Fill each cup 3/4 full with cheese mixture.  Bake at 350 degrees for 15-20 minutes.  When cool serve with a variety of pie fillings such as strawberry, cherry and blueberry fillings.  Makes approx 2 1/2 dozen.
