Banana Nut Bread

This is my favorite Banana Nut Bread recipe. I have been using it for years

Banana Nut Bread
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup butter or margarine
1/3 cup sugar
2 large eggs
1 cup mashed, ripe bananas (about 2 large)
1/4 cup milk
1/2 cup chopped walnuts or pecans
Heat the oven to 350 degrees. Grease and flour a loaf pan. On a sheet of waxed paper, sift together the flour, baking powder, baking soda, cinnamon and salt.

In a large bowl, with an electric beater at medium high speed, cream the butter and sugar until they are light and fluffy. Beat in the eggs, one at a time. On low speed, gradually add the dry ingredients and the bananas and milk, beating until the batter is smooth. Fold in the nuts.

Spoon the batter into the prepared pan. Bake 55-60 minutes, or until it is golden on top and a cake tester comes out clean. Cool the bread in the pan on a wire rack for 5 minutes. Remove the bread from the pan and cool it completely on the rack. Wrap the bread tightly in aluminum foil and let stand over night before slicing (I dare you!).
