Rolo Cookies

These are a family favorite. I made them for a Church activity Monday evening and it made me sad. I realized I had never made them by myself before. I have always had a daughter helping me. It made me sad. They are good though!

1 cup granulated sugar
1 cup brown sugar
1 cup butter
2 eggs
2 1/2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons vanilla
48 -56 Rolo Candies (this takes one bag plus one roll usually - just by two bags so you can snack on them!)

Beat sugars and butter until fluffy. Add vanilla and eggs to sugar mixture. Fluff together with a wire wisk the flour, cocoa, baking soda and salt. Add the flour mixture to the sugar mixture and blend well. Shape one Tablespoon cookie dough around a Rolo candy and place on an ungreased baking sheet (I spray it with cooking spray anyway after a bad experience). Bake for 7-10 minutes or until done. Cool for 2 minutes before removing from baking sheet. Cool on wire rack. Store in an airtight container.

Note: The original recipe says just after you roll the Rolo candy into the cookie dough to dip it in granulated or powdered sugar or granulated sugar combined with chopped nuts. I don't do that for a couple of reasons. The first reason is that too many people have nut allergies now so that I just don't add nuts anymore. The second reason is that while the powdered sugar is pretty on these - it gets all over even after baked. These are still a pretty cookie without the sugar and taste wonderful. You will get raves. These are well worth making and your friends will be impressed.
