Cajun Shrimp

This is good on a salad or over rice.

1 pound shrimp, peeled and deveined (I use uncooked frozen shrimp)
2 teaspoons Cajun seasoning
2 Tablespoons butter
Salt to taste

Coat the shrimp with the seasoning in a zip seal plastic bag. Melt butter in a large skillet on medium heat. Add shrimp; cook and stir 3 minutes or just until the shrimp turns pink. Serve hot or cold.

Note: This is also a great way to serve chicken. I cube the chicken and shake it up until well coated, then I cook it up in a large skillet until cooked through and serve it up on rice. Another way to do it is to keep the chicken breasts whole, roll them in the Cajun spice and then drizzle a bit of olive oil over them. Bake them at 375 degrees for 30 minutes. This tends to make the chicken quite dry but it is good when it is cubed up and served on a salad.
