I have a Betty Crocker Calendar with recipes on it. I have made these but with a breakfast twist. This just looked like a fun, kid-friendly recipe.
Mini Cheeseburger Pies
Burger Mixture
1 pound lean ground beef
1 Tablespoon Worcestershire Sauce
1 Tablespoon dried minced onion
1 teaspoon garlic salt
1 cup (4ounces) shredded cheese
Baking Mixture
1/2 cup milk
1/2 cup Bisquick
2 eggs
Garnishes
mini kosher dill pickles
diced tomato
ketchup and or mustard
shredded lettuce
Heat oven to 375 degrees. Spray 12 regular muffin cups with cooking spray.
In a skillet, cook beef and onion over medium heat until beef is no longer pink and beef is thoroughly cooked (about 7 minutes). Cool 5 minutes and stir in Worcestershire sauce, garlic salt and cheese.
In a medium bowl, stir baking mixture ingredients with a whisk or a fork until well blended. Spoon one scant Tablespoon in each muffin cup. Top with 1/4 cup of beef mixture. Spoon one scant Tablespoon more over top of the beef mixture.
Bake 30 minutes or until toothpick inserted comes out clean. Muffin tops should be golden brown. Cool 5 minutes. With a thin knife, loosen the muffins from the cups. Place on a cooling rack and cool for 10 minutes. Serve with garnishes and enjoy.
