Oven Caramel Corn

This takes a while to make but it is worth it.  It is one of our family favorites.

Oven Caramel Corn
15 cups popped corn
1 cup brown sugar
1/2 cup butter
1/2 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
Heat the oven to 200 degrees.  Divide popped corn between two 9x13 pans or if you have a large stainless steel bowl - take out one of your oven racks and do the whole batch in that.

In a saucepan, heat sugar, butter, corn syrup and salt.  Stir occasionally until bubbly around the edges.  Continue cooking over medium heat for 5 more minutes.  Remove from heat and stir in baking soda until foamy.  Pour over popped corn, stirring until well coated.  Bake for one hour, stirring ever 15 minutes. 

Note: This does not keep well and should be eaten the same day.  We have never had a problem doing this.
