Gingerbread Waffles

I wasn't going to re-print the recipes that I already put out on my blog but then I decided that it is silly not to have all the recipes together. Please bear with me while I go through a phase of some re-doing of some of my recipes. I am not sure which recipes I have printed and which I have not. This one I know I have done because Heidi loved it so much. It was a recipe originally given to me by my cousin Cyndi Allen Peterson.

Gingerbread Waffles
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 ground ginger
2 eggs
1/3 cup sugar
3/4 cup buttermilk
1/2 cup mollases
1/4 cup melted butter
Whisk the dry ingredients together. Beat the eggs, and gradually add the sugar until frothy. Stir in the buttermilk and mollases. Add the dry ingredients and mix until just moistened. Add the butter last. Cook in a waffle iron until just cooked through. Serve with whipped cream. These are also good with butter and sugar on them. I like them just plain. Cyndi served them with a lemon sauce but I never wrote it down. Now I realize that they would be really good with that on them.
