This is good way to use up leftover turkey from holiday dinners but it is just good anytime of the year. Our son-in-law, Chris Davis' family calls these Chicken Pillows.
Chicken Roll-Ups
2 cups cut-up cooked chicken or turkey
1 can mushroom pieces
1 8-ounce package cream cheese
3-4 packages of canned crescent roll dough
Seasoned stuffing mix (like Stove-top or Pepperidge Farms)
Mix the chicken, mushroom pieces and creamed cheese together until well blended. Salt and pepper to taste. Place 1 Tablespoon of the chicken mixture in the middle of a crescent dough triangle. Roll the dough around the chicken mixture until the chicken filling is completely enrobed in the dough. Dip the roll-up in 1 cup melted butter and 1 cup seasoned stuffing mix.
Bake at 350 degrees for 20 minutes. Serve with cream gravy made from chicken stock or just eat like a chicken sandwich.
Variation: I have added peas instead of the mushrooms (there are people that highly allergic to mushrooms). Our daughter Carianne adds 2 Tablespoons chopped Jalapenos and 1 Tablespoon taco or Fajita seasoning to her filling instead of the mushrooms. Hers becomes a hot sandwich because she obviously does not serve it with cream gravy. I love her variation.
