This is a family favorite for holidays and special occasions. It is a Scandinavian dish. You need a special pan. The stove top version of the pan can be purchased at specialty stores and in areas where there is a large Scandinavian presence. This first recipe is my grandmother's recipe for Aebelskivers.
Grandma Myrl Brugger's Aebelskiver's
6 eggs
1 cup milk
1/2 teaspoon salt
1 Tablespoon sugar
1 teaspoon baking powder
1 1/2 cups flour
Separate eggs and beat egg whites until stiff and dry. Mix together milk, egg yolks, salt, sugar, baking powder and flour. Fold in the egg whites. Cook in a hot aebelskiver pan until golden brown and cooked through (flipping over half-way through). Serve with a choice of whipped cream, fruit jams, maple syrup and cinnamon sugar.
One of the people we have treated these too, loves them with honey on them. In other words - find your topping and go for it!
This recipe is one my sister, Marianne gave me. Some like it better than my grandmother's.
Bisquick Aebelskivers
5 eggs
2 cups Bisquick baking mix
3/4 cup milk
Separate eggs. Beat egg whites until stiff. In a separate bowl mix egg yolks, Bisquick and milk. fold in egg whites. Cook in aebelskiver pan. Serve as above.
