Pancakes

We got this recipe out of a book that spoofed the Gingerbread Boy story with pancakes. It is our favorite recipe and the card is well worn. The pancakes are not fluffy, but flat. I am pretty sure it is actually a crepe recipe but we use it for pancakes. I am recording it here just in case something happens. ;)


Pancakes
2 eggs
2 c. flour
2 3/4 c. milk
1/4 c. vegetable oil
3 Tbs. sugar
1 1/2 tsp. baking powder
 1 tsp. salt


For pumpkin pancakes add 1 cup of pumpkin and 2 tsp. pumpkin pie spice (1 tsp. cinnamon, 1/2 tsp. ground ginger, 1/4 tsp. ground allspice, and 1/4 tsp. nutmeg)
