I was gathering bread recipes and came across this one. The crust is the best part. We have all enjoyed it and it is simple, too.
Pumpkin Bread
3 c. sugar
1 c. veggie oil
4 eggs
1 15 oz can pumpkin puree
2/3 c. water
3 1/2 c. flour
2 tsp. baking soda
2 tsp. salt
1 tsp. baking powder
1 tsp. nutmeg
1 tsp. allspice
1 tsp. cinnamon
Preheat oven to 350 degrees. Prepare 2 bread pans (I use 2 and a small loaf pan.) with cooking spray. Cream sugar and oil together. Add eggs, pumpkin and water. Add dry ingredients to wet ingredients. Bake for 1 hour.
*I don't think that much sugar is necessary but haven't figured it out for myself for sure yet.
