I found these recently and thought they would be useful to have on hand.
Egg replacements -
decide whether the egg is for leavening (cakes, cupcakes, light and fluffy results) or binding (cookies, brownies, dense and thick results.)
For leavening to replace one egg -
1/4 cup applesauce; 1 medium mashed banana; 3 Tbs. pureed fruit
For binding to replace one egg -
2 Tbs. cornstarch plus 2 Tbs water
2 Tbs. potato starch plus 2 Tbs water
2 Tbs. instant mashed potatoes
Egg replacer (2 tsp. baking powder, 1 Tbs. water, 1 Tbs. oil; mix until well combined and gelatinous.)
1 can of diet soda can replace egg in cake.
Milk replacers-
Soy and coconut milk can replace milk in rich desserts
Almond and rice milk can replace milk in other recipes
